Tour Cookies

Garden Tour Lace Cookies (derived from a James Beard recipe)

1 ½ cups uncooked rolled oats
1 ½ cups light-brown sugar
2 tablespoons flour
½ teaspoon salt
2/3 cup unsalted butter, melted
1 egg, slightly beaten
½ teaspoon vanilla

Turn oven to 350 degrees F.

Mix the oatmeal, brown sugar, flour, and salt in a medium-sized bowl.  Stir in the melted butter, then add the egg and vanilla, and combine well.

For baking the cookies, youll need a good cookie sheet lined with either baking paper or a silicone baking sheet.  This is important.

Drop the batter by scant teaspoons on the cookie sheet, leaving lots of room between cookies.  I find about 9 cookies on an average sheet is enough.  The batter will spread considerably as it cooks and it is a nuisance to try to separate cookies after baking.

Bake for about 7 minutes.  Note that ovens vary so that you will want to keep a close watch on the first batch or two.  Its better to cook the cookies well up from the bottom burner to avoid burning them when the oven re-heats.

Cool the cookies on the baking sheets until they have become firm (just a few minutes) and then remove them to a baking rake.

Store in an air-tight, solid container.  The cookies are fragile and liable to become chewy (rather than crisp) if exposed to moist air.
